81-A. American-Style Extra Special Bitter

American ESBs are amber to deep copper. Chill haze is acceptable. Fruity esters are acceptable. Hop aroma, flavor and bitterness are medium to medium-high and typical of American or other origin hop varieties. Malt aroma and flavor are medium to medium-high. Mild carbonation traditionally characterizes cask conditioned versions, but in bottled versions, a slight increase in carbon dioxide content is acceptable. The overall impression is refreshing and thirst quenching. Diacetyl if evident should be very low. Body is medium to full. Beers in this substyle exhibit hop aroma and flavor characters typical of hops of many origins, which may deviate substantially from the hallmark attributes typical of traditional English hop varieties.
