41. German-Style Pilsener

German Pilseners are straw to pale. Appearance should be clear. Chill haze is not acceptable. The head should be dense, rich, perfectly white, very stable and show a good cling. Fruity esters should not be present. Hop aroma and flavor is moderate and pronounced, derived from late hopping (not dry hopping) with noble-type hops. Hop bitterness is medium to high. A malty residual sweet aroma and flavor should be present at low levels. Very low levels of DMS may be present. Diacetyl should not be present. These are well attenuated beers. Body is light to medium-light.
