9. Herb and Spice Beer

Herb and Spice Beers are any range of color depending on the underlying beer style. Clear or hazy appearance is acceptable. Herb and Spice beers are any beers using herbs or spices in form of roots, seeds, fruits, leaves, flowers, etc. Herb and/or spice character can range from subtle to intense. Aromas and flavors of individual spices may not always be identifiable. Hop aroma and flavor are not essential but may be present and may be more assertive than herb-spice character. Hop bitterness is very low to medium-low. Reduced hop bitterness tends to accentuate herb/spice character. Malt aroma and flavor can vary depending on intention of brewer. Body is variable with underlying style. Classifying these beers can be complex. Beers which exhibit herbal and/or spicy character are considered Herb and Spice Beers. Chili Pepper is a spice but beers brewed with chili peppers are categorized as Chili Beers. Beers brewed with pumpkin in which herb and spice character dominates should be categorized as Pumpkin Spice Beers.
To allow for accurate judging the brewer must provide additional information about the entry including the beer style of underlying base beer, herb(s) and/or spice(s) used, the timing or vessel added herbs or spices (mash tun, kettle, fermenter, bright tank, etc.), and any other ingredients and processes if used. When the base beer does not conform to any existing style in this guideline, brewer may indicate "out of existing style". Beer entries not accompanied by this information will be at a disadvantage during judging.
