28. Wood- and Barrel-Aged Strong Beer

Wood- and Barrel-Aged Strongs are any color. These wood-aged beers contain alcohol greater than 5.0% abw or 6.3% abv. Alcohol may be evident in stronger versions, in harmony with other flavor and aroma attributes, and not harsh. Any strong classic or unique experimental lager, ale or hybrid beer style, either a traditional style or unique experimental beers, can be aged for a period of time in a wooden barrel or in contact with wood. These beers are aged with the intention of imparting the particularly unique character of the wood and/or what has previously been in the barrel; but, wood aged is not necessarily synonymous with imparting wood-flavors. New wood character can be characterized as a complex blend of vanillin and/or other unique wood character. Used sherry, rum, bourbon, scotch, port, wine, tequila and other barrels are often used, imparting complexity and uniqueness to beer. Ultimately a balance of flavor, aroma and mouthfeel are sought with the marriage of new beer with wood and/or barrel flavors. Wood-Aged Beers may or may not have Brettanomyces character. Body is variable with underlying style. Fruited or spiced strong beer that is wood and barrel aged would also be appropriately categorized in this style. Sour wood-aged strong beers would more appropriately be categorized as Wood- and Barrel-Aged Sour Beer. Strong wood-aged or barrel-aged stouts would not be categorized in this style.
To allow for accurate judging the brewer must provide additional information about the entry including the classic ale, lager or experimental strong beer style being aged in wood, type of wood used (new or old, oak or other wood type), previous liquids in the barrel if any (port/whiskey/wine/sherry/other), fruit(s) or spice(s) used if any, etc. Beer entries not accompanied by this information will be at a disadvantage during judging.

28. 木片および木樽熟成ストロングビール

 木片および木樽熟成ストロングビールは、木樽の中で(もしくは木片と一緒に)一定期間のエイジングを行ったビールで、アルコール度数6.3%以上のビールを指す。色合いについて規定はない。アルコール度数が高くなるに従って、他のアロマやフレーバーと調和したマイルドなアルコール感が口中や喉越しにみなぎる。ラガー、エール、ハイブリッドを問わず、伝統的なスタイルのビールでも、エクスペリメンタルなビールでも、木樽もしくは木片からもたらされるキャラクターを付与する意図を持ってエイジングされ、アルコール度数が6.3%以上のビールであれば、色の濃淡に関わらずこのスタイルに該当する。エイジングで付与される香りは、必ずしも木そのものの香りである必要はない。新しい木樽もしくは木片からもたらされるアロマ/フレーバーの特徴としては、ヴァニラ香と木香が混じりあった複雑な印象を感じさせるものが多い。シェリー酒、ラム酒、バーボンウィスキー、スコッチウィスキー、ポートワイン、ワイン、テキーラなどの古樽でエイジングさせたビールには、非常に複雑でユニークなキャラクターが付与される。このビールを評価する際に留意すべき最大のポイントは、アロマ、フレーバー、およびマウスフィールに、使用した木樽もしくは木片のキャラクターが反映しているかどうかである。ブレタノマイセス・キャラクターは、あってもなくてもよい。木片や木樽で熟成させたサワービールは、どのような色合いのものも、このスタイルには入らない。ボディはベースにしたビアスタイルに基づく。フルーツやスパイスを加えた高アルコールビールで木片ないし木樽で熟成させたものはこのスタイルに含まれるが、はっきりとした酸味を持つものは木片および木樽熟成サワービールに該当する。木片ないし木樽で熟成させたストロングスタウトは、このスタイルに該当しない。
 このスタイルに出品するビールは、ベースにしたビールのスタイル名、エイジングに用いた木樽または木片の種類 (新オークまたは古オーク、檜、杉など)、および酒樽再利用の場合はその酒類(シェリー樽、ウィスキー樽、ワイン樽など)、フルーツやスパイスを加えていればその名前を明示することが求められる。これらについての情報が添付されていないビールは、審査の際に不利となる場合がある。
