25. Brett Beer

Brett Beers are any range of color and may take on the color of added fruits or other ingredients. Chill haze, bacteria and yeast-induced haze are acceptable at low to medium levels at any temperature. Moderate to intense yet balanced fruity-ester aromas are evident. Hop aroma, flavor and bitterness are evident over a full range from low to high. In darker versions, roasted malt, caramel-like and chocolate-like aromas and flavors are present at low levels. Fruited versions will exhibit fruit flavors in harmonious balance with other characters. The evolution of natural acidity develops balanced complexity. Horsey, goaty, leathery, phenolic and light to moderate and/or fruity acidic character evolved from Brettanomyces organisms may be evident, not dominant and in balance with other character. Cultured yeast strains may be used in the fermentation. Beers in this style should not use bacteria or exhibit bacteria-derived characters. Wood vessels may be used during the fermentation and aging process, but wood-derived flavors such as vanillin must not be present. Residual flavors that come from liquids previously aged in a barrel such as bourbon or sherry should not be present. Diacetyl and DMS should not be perceived. Beers exhibiting wood-derived characters or characters of liquids previously aged in wood would more appropriately be categorized in a Wood- and Barrel-Aged Beer style. Wood- and barrel-aged sour ales should not be categorized as Brett Beers. Beers fermented with Brettanomyces that do not display Brettanomyces character would be categorized in another style. Body is evident over a full range from light to full.
To allow for accurate judging the brewer must provide information listing a classic or other style of base beer being elaborated upon, fruit or other special ingredients if present, and/or special processes used. Beer entries not accompanied by this information will be at a disadvantage during judging.

25. ブレットビール

 ブレットビールの色合いについて規定はないが、使用したフルーツやほかの原料由来の色を反映していることが多い。冷温白濁があっても許される。また、バクテリアないし酵母がもたらす濁りも、冷温・常温時を問わずローないしミディアム程度なら問題ない。フルーティーなエステル香は穏やかなレベルから非常に強いレベルまで範囲が広いが、いずれの場合も全体の風味とバランスがとれていること。ホップのアロマとフレーバーおよび苦味のレベルは、ローからハイまでと範囲が広い。ダークなバージョンは、ローストモルト香、カラメル・チョコレート香がほのかに感じられる。フルーツ入りのバージョンは、添加したフルーツ香がほかのキャラクターと調和していることが重要である。自然の酸味がバランスのよい複雑さを生み出している。このビールのフレーバーの特徴は、ブレタノマイセス酵母によって生成された、ホーシー(馬臭)、ゴーティー(山羊臭)、レザリー(革臭)、フェノーリックなキャラクター、および酸味もしくはフルーティーな酸味である。これらのブレタノマイセス・キャラクターはローないしミディアム・レベルで、決して突出することなく、ほかのキャラクターとバランスがとれていなければならない。ブレタノマイセス酵母は培養したものを使用してもよい。しかし、乳酸菌や酢酸菌などのバクテリアを使用してはならないし、バクテリア由来のキャラクターがあってはならない。オーク樽で発酵やエイジングを行うこともできるが、その場合はビールにヴァニラ香のような木香が付与されていてはならない。バーボンやシェリーの空き樽でエイジングした場合は、それらの容器の残り香がビールについていてはならない。木香や酒香が感じられる場合は、木片および木樽熟成ビールに含まれる。また、木片や木樽で熟成させたサワーエールも木香や酒香が感じられるため、こちらのブレットビールには該当しない。また、ブレタノマイセス酵母で発酵させたビールであっても、ブレタノマイセス・キャラクターが感じられないものは、このスタイルに該当しない。ダイアセチルとDMSが感じられてはならない。ボディはライトからフルの範囲。
 このスタイルに出品するビールは、ベースにしたビアスタイル、フルーツやとくべの原料を使用している場合はその名前、発酵やエイジングに用いた容器や手法などを明示することが求められる。これらについての情報が添付されていないビールは、審査の際に不利となる場合がある。
