24-A. American-Style Sour Ale

American Sour Ales are pale to black depending on underlying beer style. Chill haze is acceptable. Bacteria and yeast-induced haze are acceptable at any temperature. Moderate to intense yet balanced fruity-ester aromas are evident. In pale versions, malt aromas and flavors are low. In darker versions, roasted malt, caramel-like and chocolate-like aromas and flavors are present at low levels. Diacetyl and DMS should not be perceived. Hop aroma, flavor and bitterness are evident over a full range from low to high. There is no Brettanomyces character in this style of beer. The acidity present is usually in the form of lactic, acetic and other organic acids naturally developed with acidified malt in the mash or in fermentation by the use of various microorganisms including certain bacteria and yeasts. Acidic character can be a complex balance of several types of acid and characteristics of age. Residual flavors that come from liquids previously aged in a barrel such as bourbon or sherry should not be present. Wood vessels may be used during the fermentation and aging process, but wood-derived flavors such as vanillin must not be present. Beers exhibiting wood-derived characters or characters of liquids previously aged in wood would more appropriately be categorized in a Wood- and Barrel-Aged Sour Beer style. Sour Beers containing fruit(s) are categorized as Fruited American-style sour ales. Body is evident over a wide range from light to full.
To allow for accurate judging the brewer must provide additional information including the classic or experimental style of base beer being elaborated upon, microbes, and/or any other ingredients or processes used. Beer entries not accompanied by this information will be at a disadvantage during judging.

24-A. アメリカンスタイル・サワーエール

 アメリカン・サワーエールの色合いは、ベースにしたビアスタイルに基づいて、ペールからブラックの範囲。冷温白濁があっても許される。また、バクテリアないし酵母がもたらす濁りは、温度の高低にかかわらずあっても構わない。フルーティーなエステル香は穏やかなレベルから非常に強いレベルまで範囲が広いが、いずれの場合も全体の風味とバランスがとれていること。モルトのアロマとフレーバーについては、色が明るいバージョンの場合、ロー・レベル。ダークなバージョンは、ローストモルト香、カラメル・チョコレート香がロー・レベルで感じられる。ダイアセチルとDMSが感じられてはならない。ホップのアロマとフレーバーおよび苦味については、ベースにしたビアスイルに準じてローからハイ・レベル。酸味が特徴となっているが、ブレタノマイセス由来のものであってはならない。このビールの酸味は、乳酸、酢酸、その他の有機酸に由来するもので、それらは酸菌を接種した麦芽から糖化工程で抽出されたり、発酵中にバクテリアや酵母を含む多様な微生物によって生成されたものである。そして、これらの酸味がエイジングを経てバランスよく複雑に絡み合っていることが特徴。バーボンやシェリーの樽でエイジングした場合は、それらの容器の残り香がビールについていてはならない。オーク樽で発酵やエイジングを行った場合は、ヴァニラ香のような木香が感じられてはならない。容器の残り香や木香が感じられる場合は、木片および木樽熟成サワービールに含まれる。フルーツ入りのバージョンの場合、フルーツ入りアメリカン・サワービールに該当する。ボディはライトからフルの範囲。
 このスタイルに出品するビールは、ベースにしたビアスタイル、使用した原料名、特別に使用した酵母や微生物があればその名前、採用した醸造方法(例えばサワー・マッシュ、乳酸菌添加)などを明示することが求められる。これらについての情報が添付されていないビールは、審査の際に不利となる場合がある。
